Cut horse-flesh and fat into pieces about 10-12 cm wide. Season them with salt and pepper, rub to make the seasoning absorbed and put to a cool place for 10-11 hours. Wash a sheep’s or cow’s intestine in warm, then in hot water with salt several times. Tie one end of the intestine and fill it with the prepared mince from the other end. Tie it in several places with a string, tie the open end and hang in a sunny place for 3-4 days to make it dried. Then keep in warm place for 2-3 weeks till it is ready. Sausage can be served as a cold dish, in a hot way or used for soup.
