Take a breast of horse-flesh, beef or mutton, cut it into pieces and boil. Put it in a warm place. Boil salma (square noodles) in the broth.
To make salma knead a stiff unleavened dough with eggs and salted water. Roll the dough out square to the thickness of about 1 mm and cut it into squares of 3-4 sq cm. The smaller the squares of salma the better. Put the boiled salma into a dish, pour with fat and garnish it with herbs and onions.
Season the broth with pepper, finely cut onions and serve in cups. Then serve the meat and salma which should be poured with the broth.
Ingredients for 10-12 persons: 5 kg meat, 1 kg flour, 1 glass water, 3 eggs, 5 onions, salt, pepper and herbs up to taste.
